Bacon Vegetable Hash

This delicious dish is easy to make, full of vegetables, keeps your carbs intake on the low side and did I mention it tastes delicious? Give it a try. If you can, try to go for bacon that is preservative and sulphite free. I get mine from Sausages by Design, or Hendersons at the supermarket is another brand that contains zero nasties.
Ingredients:

Bacon

Potatoes or Kumara to keep it lower on the carbs, scrubbed and chopped

Broccoli

Spinach
-
Red onion (or white is fine)

Olive Oil

Balsamic vinegar
-
Feta (optional)
Method:

Grill bacon in the oven over a roasting pan to catch all the juices. Go for sulphite free bacon like Hendersons or Sausages By Design

Remove bacon once cooked, and when it is cool break into small pieces

Add chopped potatoes/kumara to the pan and roast (remember to leave the skin on for more nutrients)

Cut broccoli into small pieces and steam over boiling water

Chop spinach finely

Slice red onion

About ten minutes before the potatoes/kumara are ready, add sliced red onion and finely diced spinach to the roasting pan, stir, continue to bake.

Once veg in the oven is cooked, stir in steamed broccoli and bacon pieces

Add in crumbled feta

Serve and drizzle with balsamic vinegar and olive oil

Fresh chopped baby tomatoes would be a nice option too
