Choc Berry Popsicles

These are delish. I was hoping to have more in the photo but they all got eaten. This recipe is adapted from Pete Evans' cook book, and, don't freak out, but it contains raw egg. I looked at Pete on the cover and said "a raw egg, Pete? Are you sure?" and he looked at me with his sparkly blue eyes and said "Melissa, trust me, use the egg" and I whispered breathlessly "okay Pete. I trust you". Then I hugged him. Well, I hugged the book. And he was right, it tastes creamy and rich, so don't be afraid. Listen to Pete.



  • 250 ml can coconut cream

  • 1 egg

  • 1 banana

  • 1 tablespoons honey

  • Water to mix

  • 2 tablespoons cacao or cocoa powder

  • Frozen or fresh berries

  • Cacao nibs (optional)


  1. Blend everything except berries and cacao nibs - I used a stick blender.

  2. Fill ice block moulds half way, pop in a berry or two.

  3. Once semi frozen (usually done in half an hour), add in more berries and cacao nibs, and fill to the top with the rest of the choc mixture, pop in the stick and refreeze til solid.
