Chocolate Almond Muffins

These muffins are a great treat food, high in good fats and proteins from the nuts, and using only 1/4 c of honey means they're low in sugar too.

Heat oven to 180 deg C

Ingredients:
 

  • 1 1/2 cups of almond meal

  • 1/4 cup good quality cocoa powder (or cacao powder)

  • 1 teaspoon baking powder

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/4 cup coconut oil, melted

  • 1/4 cup milk of your choice

  • 1/4 cup honey, melted

Method:
 

  1. Grease 12 mini muffin compartments, or 6-7 normal size

  2. Combine almond meal, cocoa, baking powder. Mix together with a fork

  3. Add the eggs, vanilla, oil, milk and honey

  4. Fold the dry and wet ingredients together until it forms a smooth batter

  5. Spoon into muffin trays

  6. Bake 15-20 mins

Allow to cool and then turn out on to a wire rack.
