Chocolate Almond Muffins

These muffins are a great treat food, high in good fats and proteins from the nuts, and using only 1/4 c of honey means they're low in sugar too.
Heat oven to 180 deg C
Ingredients:

1 1/2 cups of almond meal

1/4 cup good quality cocoa powder (or cacao powder)

1 teaspoon baking powder

2 eggs
-
1 teaspoon vanilla extract

1/4 cup coconut oil, melted

1/4 cup milk of your choice

1/4 cup honey, melted
Method:

Grease 12 mini muffin compartments, or 6-7 normal size

Combine almond meal, cocoa, baking powder. Mix together with a fork

Add the eggs, vanilla, oil, milk and honey

Fold the dry and wet ingredients together until it forms a smooth batter

Spoon into muffin trays

Bake 15-20 mins
Allow to cool and then turn out on to a wire rack.
