Chocolate Avocado Pudding

Who wants chocolate pudding in their lunch box? Everyone, that's who! Easy peasy to make, has a vegie in it, no added sugar and the kids think they're getting chocolate yoghurt. Fooled again. You can't taste the avocado at all.
This made enough for 3 small containers, but double the ingredients if needs be so you have more for another day:
Ingredients:

1 banana, I used a frozen one

Half an avocado

2 tablespoons of good quality cocoa or cacoa powder

1 teaspoon vanilla extract

Handful of nuts and seeds (optional)
Method:

Blend everything except nuts with a hand held blender or in a food processor

Add in nuts/seeds and blend a bit more so they're chopped but still kind of chunky

You could add in shredded coconut if you wish

Put in containers and freeze overnight

Pop in lunch boxes (remember the spoon!) and they'll be thawed by lunch time or sooner

Make sure you make one for you too
TIPS:
I bulk buy on-sale bananas that are spotty and brown (meaning they're sweeter) at the vegie shop, peel and freeze them - or you could put them in the freezer unpeeled. Then they're ready to go for dishes like these, to use in baking or added to a smoothie.
If you have any avo's that are getting too soft to eat, cut them in half and freeze to use in recipes.
