Chocolate Berry Bark

This is very moreish - but remember, it's a once in a while treat.  Adapted from the I Quit Sugar recipe -  but I've made it a little bit sweeter.

 

Ingredients

  • 1/3 cup of frozen berries (I used blueberries, blackberries and raspberries - organic is best)

  • 1/3 cup shredded coconut (I used Pam's coconut threads - contains zero sulphites)

  • 1/3 cup coconut oil

  • 80 g salted butter (it's best to use salted, but normal is fine too)

  • 2 tablespoons of cacao or cocoa powder

  • 2-3 tablespoons of pure maple syrup (or you can use rice malt syrup but makes it far less sweet)

Instructions

  1. Line a large dinner plate with baking paper

  2. Scatter the frozen berries on the baking paper and then scatter with coconut threads

  3. Melt the oil and butter in a saucepan

  4. Add maple syrup and cocoa/cacao powder into the melted oil and butter and stir until combined

  5. Pour this mixture over the berries and coconut until fully covered

  6. Put this into the freezer for at least 30 minutes until firm

  7. Break into shards or cut into wedges to serve
