Coco-Nutty Granola

Want a refined sugar free cereal that's going to keep you full til lunchtime and tastes good? I bet you do. Hubby and I have this Coco-Nutty Granola (adapted from I Quit Sugar) most mornings - topped with coconut cream and berries, it's full of good fats that keep you satiated and ensures you don't get any sugar spikes that usually come from eating processed sugar-laden muesli's and cereal's, that your body then converts to fat.
This makes enough to last us all week, so divide ingredients in half if you need to.
Ingredients:

1/2 cup coconut oil

1/4 cup honey

2 tablespoons cinnamon

2 x 250 gram bags shredded coconut or coconut chips

1 cup sunflower seeds

1/2 cup pumpkin seeds

1 cup chopped nuts (almonds, walnuts etc)
Method:

Heat oven to 140 deg C

In a large baking dish put 1/2 a cup of coconut oil and 1/4 a cup of honey

Put tray in the oven to melt oil/honey

Once coconut oil and honey are melted, remove tray from the oven and add 2 tblspoons of cinnamon, stir through

Pour in 2 x 250gram bags (or 4-5 cups) of shredded coconut or coconut chips (I use the Pam's threaded coconut as it doesn't contain any sulphites or preservatives, Ceres organics is good too)

Coat coconut with the honey/oil/cinnamon mixture

Add in seeds of choice - pumpkin, sunflower, chia etc (I usually do a cup of each) - stir.

Add in chopped nuts if desired - almonds, walnuts, cashews etc - stir. But if watching your weight, omit or keep to a minimum

Bake 15-20 mins until golden - keep an eye on it and stir often as it can burn easily.
Also makes a great lunch box addition, or a topper for yoghurt.
