Crunchy Nut Muesli

Thanks to Kaya Butterfield for sharing this muesli - it really is delish!



  • 1 cup each cashews, walnuts, activated almonds,

  • 1 tsp Cinnamon

  • 2 tbsp Honey

  • 2 tbsp Coconut oil

  • 2 cups Rolled Oats (or you could use quinoa or buckwheat flakes)

  • 1/4 cup Desiccated coconut


  1. Mix everything except coconut together in an oven dish and bake at 160C for 10min

  2. Then add coconut and bake for another 10 minutes.

  3. Optional - dried fruit (but not too much due to a high sugar content), or extra pumpkin/sunflower seeds, sesame or chia.

  4. Topping with fresh fruit and adding a dollop of plain full-fat yoghurt is a good idea too.
