Healthy Coconut Rough

Ingredients:

3 cups desiccated coconut (or shredded is fine)

1/2 cup melted coconut oil

2 heaped tablespoons of cacao or cocoa powder

1 handful of dates or 8 medjool dates - If using normal dates (not medjool) soak in hot water for about 10 mins, then drain.
Method:

Blend on high until sticky (you may need to add a little water to get things going).

Press into a lined dish. Sprinkle with desiccated coconut - optional.

Refrigerate til set.

Slice and serve. And yes, they do hold up in lunch boxes.
Nutrition nugget: Coconut is rich in fibre, fights diabetes and cardiovascular disease. Great for our brain health, contains calcium, copper , magnesium and selenium. This slice is filling and wont give you or your little ones blood sugar spikes. Enjoy!
