Kumara (sweet potato) Hashbrowns

Kumara (sweet potato) hashbrowns are a great healthy alternative when you want to avoid bread or other high refined carbohydrates like white rice and pasta etc. These are great added to a salad for lunch or as a toast alternative at breakfast time - top with a few eggs and some spinach - delish. Also fantastic as a lunchbox addition for the kids too.
Ingredients

1 medium sized kumara (or half a large one)

1 egg

Himalayan or sea salt

Pepper

Coconut oil or butter/ghee for cooking
Method

In a bowl mix together the kumara, egg, salt and pepper until combined.

Heat a frying pan (cast iron is best) over medium heat.

Melt 1 tablespoon of coconut oil in the pan.

Add a large tablespoon of kumara mixture into the pan, flattening slightly and repeating until there are about 4 batches - avoid over crowding the pan or else they will not go crispy.

Cook until golden.

Flip and cook the other side.

Usually takes about 3-4 minutes to cook through, but keep an eye on them so they don't burn.

Make extra and store in the fridge for later use.
