Lemon & Coconut Slice

Finally!  A raw slice that stays firm in the lunchboxes.  I've been on the hunt for a while and thanks to Primal Palate my prayers have been answered.   With minimal ingredients and very easy to make, it's a great recipe.  The dates make it quite high in sugars, so it is a treat food.  But at least your getting fibre and other nutrients from the dates compared to just sugar.   I add in a bit of extra lemon zest due to being a lemon-lover (my daughter and I can happily eat them raw).

Ingredients:

  • 1 cup Almonds

  • 1 1/2 cup Dates (Medjool), or soak pitted dates in a cup of boiling water for ten minutes, drain and discard the water

  • 2 whole Lemons

  • 1 1/2 cup Coconut, Shredded

  • 1/2 tsp Salt

Method:

  1. In your food processor, process one cup of almonds until they are fine like almond meal

  2. Finely grate the rind of the lemons & add to the almonds in the food processor

  3. Juice the lemons & use 2 or 3 tablespoons of lemon juice depending on how lemony you want your slice to taste

  4. Add the lemon juice & the dates to the food processor

  5. Blitz until the mixture is dough like. This may take a bit of time depending on the power of your food processor. You also may need to stop the food processor several times & scrape down the side

  6. Once the mixture is soft & dough like place in a mixing bowl, add the salt & add most the shredded coconut (leaving a little bit to sprinkle on the top of the slice), mix

  7. Once mixed place in a slice tray that has been lined with baking paper

  8. Press the mixture into the slice tray & place in the fridge for 1 hour

  9. Cut into squares & enjoy!
