Easy-to-make Homemade Mayonnaise

Almost ALL the mayonnaise you buy at the supermarket is made with added preservatives, additives, sugar and substandard vegetable oils (which cause huge amounts of inflammation in our bodies). So, give this homemade Paleo version a try. Incredibly easy to make (in fact, my son makes it for us - he won't eat salad without it) and great to use on salad or as a dipping sauce. You could also add in ingredients such as garlic, lemon, fresh herbs, curry powder etc to it to create different flavours.  You'll need a stick blender to create this mayo.

Ingredients

  • 1/2 to 1 tbsp Dijon mustard

  • 1 cup of Light or Extra Light Olive Oil (must be light - if you use regular flavour the mayo will have an odd tang to it)

Method

  1. Put all ingredients into a tall container.

  2. Blend, moving the stick blender up and down for about 20-30 seconds and a beautiful, creamy mayonnaise will appear.

 

Note - you could also use this as a basis to make a ranch dressing or taretare sauce.
