Millet Porridge

Millet is a delicious gluten free grain that can be used in many recipes, replacing rice and couscous etc.  However, it's also great as an oats alternative for making porridge.  So grab some next time you're at the supermarket and give this grain a try.

Ingredients

  • 1/2 cup millet, rinsed and drained 

  • 1 1/2 cups water

  • 1/4 teaspoon salt 

  • 1/2 cup coconut cream

  • 1 teaspoon cinnamon 

  • 1 teaspoon vanilla extract

Optional

  • 1/2 grated apple or half a chopped banana

  • Small handful of raisins or goji berries

  • Chopped nuts and/or sunflower seeds

  • Cacao nibs

Method

  1. In a small saucepan add the millet water and salt and cook for 5 minutes on low heat.

  2. Increase heat to medium and cook for approximately 10-15 minutes until the grain has puffed up.

  3. Reduce the heat back to low and add coconut cream, apple/banana and/or raisins/goji berries if using.

  4. Simmer for a few minutes until heated through.

  5. Remove from heat, put in a bowl and top with milk (we use rice or almond milk).

  6. You can top with nuts/seeds/cacao nibs if you wish.
