Nourishing Vegie Nacho Mix
in the Crock Pot

This is a great way of sneaking extra veges into you kids meal without them realising it.
Serves 4-5
Ingredients

1 can kidney beans (or 1 cup dried beans, soaked and pre-boiled)

1 can chick peas (or 1 cup dried beans, soaked and pre-boiled)

1 onion, diced
-
1 clove garlic, crushed
-
1 can diced toms (see Label Watch Weds post last week for best brands)

1 tablespoon tomato paste
-
1 teapoon of honey
-
2 cups bone broth or stock
-
2 carrots grated
-
Big bunch of finely chopped spinach/kale/silverbeet
Method:

Place all the ingredients into a slow cooker

Cook on low for 5 hours or high for 2
Additional toppings:
Once cooked and in bowls, top with fresh toms, avocado, cheese, coriander etc. Yum
