Addictive Nuts - Rosemary, Olive Oil & Maple Syrup

If your kids aren't keen on eating nuts - then try this recipe. Even great to serve as snack food for adults. These are highly addictive, as suggested by Petite Kitchen (thanks for the recipe).
Ingredients:

1/8 cup of extra virgin olive oil

2 cups mixed nuts (almond, walnut, cashews, brazil - anything really. You could add in pumpkin and sunflower seeds too)

1 handful of rosemary leaves

2 tablespoons of maple syrup or honey

1 teaspoon Himalayan or sea-salt
Directions:

Place a sheet of baking paper on a large oven tray or chopping board and set aside.

Warm the olive oil in a frying pan over medium heat.

Once it is warmed/hot add the nuts and rosemary and stir until they are well coated.

Keep stirring. After about 2 minutes add the maple syrup/honey and continue to stir for a minute or so.

Sprinkle the salt over the nuts, stir and then remove from the heat once the nuts have browned a little.

Transfer the nuts to the baking paper, spreading them out in a single layer to allow the syrup to harden.

Leave to cool completely then store in an airtight container or jar.

Nuts will keep in a cool dark place for 3-4 weeks.
