The Best Pikelets & Easy Blueberry Sauce

When I first made these pikelets for my kids, they couldn't believe they were a healthier version and even said "these are the best - they're just like normal one's mum".  Hence the name Best Pikelets.  I quite often take these to get togethers and they're happily devoured by all.  Make them larger and top them with Easy Blueberry Sauce (recipe below) and you've got delicious American style pancakes for breaky.  Gluten and processed sugar free.



  • 1/2 c almond meal

  • 1/2 c tapioca or arrowroot flour

  • 2 tbsp coconut flour

  • 2 tsp baking powder

  • 2/3 c milk of your choice

  • 2 eggs, whisked

  • 1 tsp vinegar, I use ACV

  • 1 tbsp honey




  1. In a large bowl, combine dry ingredients. 

  2. In a separate bowl, combine wet ingredients.

  3. Make a well in dry ingredients. 

  4. Pour wet ingredients into the well of the dry ingredients.

  5. Mix  dry ingredients into wet, slowly, until combined.

  6. Spoon dollops onto a hot greased pan, flip when bubbling.

Easy Blueberry Sauce

This blueberry sauce is da bomb.  Only has 2 ingredients (well, 3 if you count the water).  Just make sure you remove the sauce from the heat as soon as you've added the arrowroot/tapioca powder, or else the thickening will not happen.



  • 2 cups fresh or frozen blueberries (no need to thaw before use if frozen)

  • ¼ cup water 

  • 2 tsp. arrowroot powder (also known as tapioca flour) mixed with 1 Tbs. water

  • honey optional




  1. Place the berries and ¼ cup water in a small saucepan over medium heat. 

  2. Cook for 5-10 minutes, until bubbling. Slightly mash some of the blueberries with the back of a fork.

  3. In a cup mix the arrowroot powder and 1 Tbs. of water. 

  4. Remove the saucepan of berries from the heat. While stirring constantly, add the arrowroot mixture into the blueberry sauce. 

  5. Let cool slightly and the sauce will thicken


If you can stop yourself from eating it all, it will keep in the fridge for a few days.
