Healthy Rice Pudding in the Slow Cooker

Canned rice puddings found in the supermarkets are full of ingredients that are not great for our bodies, along with a lot of sugar.  So making your own is a great option.

This recipe is fantastic as you can cook it in the slow cooker overnight, so it's ready for breakfast in the morning, or could be a great lunchbox addition or dessert.

  • 1 cup brown rice

  • 2 cups coconut milk

  • Juice from one orange

  • Grated rind from one orange

  • 4 cups water

  • 2 teaspoons cinnamon

  • 10 chopped dates

  1. Grease slow cooker with coconut oil, olive oil or butter

  2. Put all ingredients in the slow cooker

  3. Put on the lid and cook on slow over night or for 6-8 hours

  4. Upon serving, add in extra milk it desired, and top with fruit, nuts or seeds.
