Veggie Packed Frittata

Frittata is such an easy meal to make and you can get a load of veg in too.  It’s also a great way to use up left overs, or anything looking kid of limpish in your vegie draw.


  • 1 chopped onion

  • 1 clove of garlic, minced

  • Coconut oil or butter

  • 2 eggs per person, whisked

  • Vegetables, chopped, like spinach, silverbeet, cooked pumpkin/carrot/kumara/potato

  • Cheese, optional


  1. In a pan melt coconut oil or butter and sauté one chopped onion and one clove of garlic til transparent

  2. Add in whatever chopped veg you desire

  3. Pour whisked eggs into the pan

  4. Cook until firm

  5. Top with cheese if you are eating dairy

  6. Place pan under a pre heated grill - note, if your pan has a plastic handle, wrap a damp cloth around the handle first to prevent melting

  7. Grill until the top is firm

  8. Slice into wedges and serve with extra veg on the side
